Wild Mushrooms are sprouting in the Macedon Ranges, so it is no better time to visit where they grow and learn more about them from the experts.
On this forage you will get an insight into Wild Mushrooms, meet the buyers from Yarra Valley Farms and end the day with a cooking demonstration and tasting!
Our host in Macedon will be Jim Fuller “Jim worked for years as a line cook and chef in Texas, and in 2006 he joined one of America’s largest specialty mushroom farms, Gourmet Mushrooms Inc. In 2010 he headed up the spawn laboratory at Australia’s biggest producer of cultivated mushrooms, Costa. Since then he founded The Great Australian Mushroom Co. and has been establishing a food culture around using native Australian mushrooms – an ambition that has proven seductive to the Melbourne restaurant scene.” read more here at SmudgeEats
It is important that when you are foraging for mushrooms you are aware which ones are edible and those that are poisonous. Some of the worlds most deadly mushrooms are growing here in Australia! Jim will explain which mushrooms you need to look for – and most importantly what will happen to you if you pick the wrong one.
Wild mushrooms will give your dishes so much more taste, texture and colour variance, this forage will leave you inspired to experiment with your own menu.
